680 g boneless, skinless chicken breasts, diced
3–4 cups packed fresh spinach
225 g cream cheese
120 ml sour cream
120 ml heavy cream
240 ml chicken broth
1 cup shredded mozzarella cheese
50 g grated Parmesan cheese
1 small onion, finely chopped
2 cloves garlic, minced
15 ml olive oil
1 teaspoon paprika
1/2 teaspoon dried thyme
Salt and pepper to taste
1/4 teaspoon red pepper flakes (optional)
227 g mushrooms, sliced (optional)
Instructions
Preheat the oven to 375°F (190°C). Pat the chicken dry with paper towels and season with salt and pepper. Sear the chicken in a hot skillet with 1 tablespoon olive oil until browned; set aside.
Lower the heat and stir in the cream cheese, sour cream, and heavy cream until the mixture is smooth and glossy. If you want a lighter sauce, you can scale back the cream cheese to 4 oz and thin with extra broth as needed.
Stir in the spinach and cook 1–2 minutes until wilted.
Return the chicken to the pan and add the chicken broth. Sprinkle with paprika and thyme. Taste and adjust salt and pepper.
Transfer the mixture to a lightly greased casserole dish. Top with mozzarella and Parmesan. Bake for 20–25 minutes at 375°F (190°C) until the cheese is melted and the center reaches 165°F (74°C). Optionally broil for 1–2 minutes for a deeper crust, then rest 5 minutes.
Serve in portions with extra sauce and a bright garnish. Pair with sides like roasted broccoli, cauliflower rice, or crusty bread.
