Description

Steamed Cow Cake, or ‘Bánh Bò,’ is a traditional Asian dessert known for its chewy texture and sweet flavors, making it a cultural emblem of deliciousness.


Ingredients

  • 1 cup Glutinous Rice Flour
  • 1 cup Coconut Milk
  • ½ cup Sugar
  • 1 teaspoon Yeast
  • ½ cup Water
  • ½ teaspoon Salt
  • 1 teaspoon Pandan Leaf Extract

Instructions

  1. In a mixing bowl, combine glutinous rice flour, sugar, and salt. Stir to distribute the dry ingredients evenly.
  2. In another bowl, mix coconut milk, lukewarm water, and yeast. Let sit for about 5 minutes until bubbly.
  3. Gradually add the wet mixture to the dry ingredients and stir until you have a smooth, lump-free batter.
  4. Fold in the pandan leaf extract for flavor and color.
  5. Fill a steamer pot with water and bring to a boil. Grease a round baking dish.
  6. Pour the batter into the greased dish and place it in the steamer. Cover and steam for 25-30 minutes until a toothpick inserted in the center comes out clean.
  7. Remove the cake from the steamer and let cool slightly before cutting.

Notes

Serve with fresh fruits or drizzled with honey for added flavor. Can be stored at room temperature for 1-2 days, refrigerated for up to a week, or frozen for a month.
