Description

Indulge in these irresistible Strawberry Cheesecake Truffle Bites, a healthier twist on classic cheesecake that combines creamy textures with the sweetness of fresh strawberries.

Ingredients

Scale
  • 1 cup Fresh Strawberries, chopped
  • 8 oz Low-fat Cream Cheese, softened
  • 1 cup Crushed Graham Crackers
  • 1/2 cup Powdered Sugar
  • 1 tsp Vanilla Extract
  • 8 oz Dark Chocolate, melted

Instructions

  1. Wash and dry the strawberries, remove stems, and chop into small pieces.
  2. In a bowl, combine cream cheese and powdered sugar until smooth.
  3. Gently fold in the chopped strawberries.
  4. Add the crushed graham crackers and mix until well incorporated.
  5. Cover and chill the mixture for at least 1 hour.
  6. Scoop and roll the mixture into balls.
  7. Melt the dark chocolate in intervals, then allow it to cool slightly.
  8. Dip each truffle into the melted chocolate.
  9. Place on parchment paper and refrigerate to set for 30 minutes.

Notes

For lower fat, consider using Greek yogurt instead of cream cheese. You can also make these gluten-free by substituting almond flour for graham crackers.
