Description

Ingredients

  • 1.5 cups Graham Cracker Crumbs
  • 1/2 cup Granulated Sugar
  • 1/2 cup Unsalted Butter, melted
  • 32 oz Cream Cheese, softened
  • 1 cup Sour Cream
  • 1 tablespoon Vanilla Extract
  • 3 large Eggs
  • 2 cups Fresh Strawberries, pureed + additional for garnish

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and butter in a bowl. Press into a 9-inch springform pan.
  2. Beat cream cheese until creamy. Add sugar gradually, mix in sour cream and vanilla, then add eggs one at a time.
  3. Fold strawberry puree into a portion of the filling, keeping some plain. Pour plain filling into crust.
  4. Dollop strawberry filling over the cheesecake base and swirl with a knife.
  5. Bake for 55-60 minutes until edges are set and center jiggles slightly.
  6. Let cool in oven for an hour, then refrigerate for at least 4 hours or overnight before serving.

Notes

For a lighter cheesecake, use reduced-fat cream cheese or swap sugar for natural sweeteners. Ensure all ingredients are at room temperature to avoid lumps.
