Description

A healthy and scrumptious alternative to traditional pizza, packed with nutrients and flavor.


Ingredients

  • Zucchini
  • Ground Turkey (or Ground Beef)
  • Marinara Sauce
  • Mozzarella Cheese
  • Bell Peppers
  • Italian Seasoning
  • Eggs
  • Onion

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Using a spiralizer or grater, shred the zucchini and squeeze out excess moisture.
  3. In a large skillet, cook ground turkey (or beef) over medium heat until browned. Drain excess fat and stir in onions and bell peppers until softened.
  4. In a bowl, mix drained zucchini, meat and vegetable mixture, marinara sauce, mozzarella cheese, Italian seasoning, and eggs until combined.
  5. Pour the mixture into a greased 9×13 inch baking dish. Bake for 25-30 minutes until cheese is bubbly and golden brown.
  6. Allow to cool for a few minutes before slicing and serving warm.

Notes

For a vegetarian version, substitute ground turkey with chickpeas or use plant-based cheese.
