Ingredients
- Zucchini
- Ground Turkey (or Ground Beef)
- Marinara Sauce
- Mozzarella Cheese
- Bell Peppers
- Italian Seasoning
- Eggs
- Onion
Instructions
- Preheat your oven to 375°F (190°C).
- Using a spiralizer or grater, shred the zucchini and squeeze out excess moisture.
- In a large skillet, cook ground turkey (or beef) over medium heat until browned. Drain excess fat and stir in onions and bell peppers until softened.
- In a bowl, mix drained zucchini, meat and vegetable mixture, marinara sauce, mozzarella cheese, Italian seasoning, and eggs until combined.
- Pour the mixture into a greased 9×13 inch baking dish. Bake for 25-30 minutes until cheese is bubbly and golden brown.
- Allow to cool for a few minutes before slicing and serving warm.
Notes
For a vegetarian version, substitute ground turkey with chickpeas or use plant-based cheese.
